Sea Vegetable & Nettle Cocktails At Pollen Room Pop Up

Beautiful floral cocktails and unique, locally sourced ingredients at new Pollen Room pop up at Perilla in Stoke Newington.

Award winning bartender and Co-Founder of Pollen Room Anya Montague has set up a shop at Perilla, with a two week cocktail bar pop up. Here you’ll find beautiful floral-style drinks using local ingredients, a perfect fit for Perilla, which also has a focus on humble, local produce.

Drinks on the short term Pollen Room menu include one made with unfortified fino sherry, pickled sea purslane and homemade vermouth. ‘Nettle’ is made with white nettle cordial, Dewars 12, cow parsley and citric solution. Featured above is ‘St Germain’, with elderflower, spring blossoms, French aperitif, rhubarb + fizz.

Anya has come straight here from a short term collaboration with Dan Barber on food waste pop up WastED at Selfridges, (which finished at the end of April).
